We had cooked Delia’s Irish Stew with Parsley Dumplings the night before. A slightly modified version without the leeks and with the addition of a lamb stock cube and fresh parsley. Cabernets are often recommended with this dish, but we didn’t have anything suitable, so we went for a Rioja – Marquis de Carano 2004 from Tesco. It was OK, but hardly a stunning match. So, for the leftovers, we noted that Spanish Penedès whites can go quite well with some lamb casseroles and also go well with parsley. We had a bottle of Torres Viña Esmerelda 2009 a Penedès white blend from Makro in the fridge and tried this. Success. We thought the aromatic, herby flavours in the wine went very well with this dish.
